Keroppi Matcha Mini Cheesecake

Who doesn’t love to enjoy a classic cheesecake? This mini cheesecake recipe is very simple to make. Here is how to create these Keroppi matcha mini cheesecakes.

Ingredients:

I have attached links for some of the ingredients/items that I used below.

Cheese Cake Crust:

  • 70g of Graham Crackers or Digestive Biscuits. I am using graham crackers.

  • 25g of Melted Unsalted Butter

Cheese Cake Filling:

  • 150g Softened Cream Cheese

  • 50g Sugar

  • 1 Egg

  • 1/2 Tsp Lemon Juice

  • 8g Flour

  • 2g Matcha Powder

  • 93g Sour Cream

Decoration:

*You will need a 6 cup muffin pan.

Steps:

  1. Place your crackers into a Ziploc bag, and use a rolling pin to crush your crackers. Pour the mixture into a bowl, and add melted butter. Give it a mix.

  2. Take your muffin pan and place your muffin liners. Divide the crust mixture evenly into your muffin liners. Use the back of your spoon to press it down.

  3. Place the muffin pan into the freezer to allow the crust to harden.

  4. Preheat the oven to 320F.

  5. In a bowl, add cream cheese and sugar and mix until the mixture is smooth and creamy.

  6. Add an egg and mix until it is combined.

  7. Add lemon juice, flour, and matcha powder, and stir until everything is combined.

  8. Add in sour cream and mix until everything is combined.

  9. Evenly divide the cheesecake filling into each muffin liner.

  1. Bake for about 15 - 20 minutes at 320F. I am using a countertop oven.

  2. Once the time is up and the cheesecakes are cooked, leave them in the oven for 5 minutes before taking them out.

  3. Take out the cheesecake and let it sit for about 20 minutes before placing it in the fridge.

  4. Leave it in the fridge for 30 minutes - 1 hour.

  5. While your cheesecakes are cooling, let’s create Keroppi’s eyes. Draw a white circle on the parchment paper using melted white chocolate. This will be the eye. Take melted dark chocolate and draw in Keroppi’s pupils. You can look at the picture below as a reference. Place the parchment paper in the freezer to allow the chocolate to harden.

  1. After 30 minutes - 1 hour, it’s time to create Keroppi. Take your chocolate eyes out of the freezer and place them on top of the Keroppi mini cheesecake.

  2. Melt white chocolate and add a drop of pink food colouring (you can also use pink candy melts) and draw on Keroppi’s cheeks.

  3. Take melted dark chocolate and draw a wide V. This will be Keroppi’s mouth.

  4. Let the cheesecakes chill in the fridge overnight.
