We Bare Bears Pull-apart Bread Recipe
Ingredients:

White Dough (Ice & Panda Bear) -
200g Flour
100g+ Lukewarm Milk
30g Sugar
2g Instant Yeast
A Pinch of Salt
20g Unsalted Butter
2/3 of a Whisked Egg
Brown Dough (Grizzly Bear) -
100g Flour
3g Cocoa Powder
50g Lukewarm Milk
30g Sugar
1g Instant Yeast
Pinch of Salt
10g Unsalted Butter
1/3 Whisked Egg
Sesame Dough (Panda’s eyes, ears, belly)
20g Flour
1 Tsp Black Sesame Powder
Square Pan dimensions: 8 inch by 8 inch
Steps:
White Dough (Panda/Ice Bear):
Take 100g of lukewarm milk and add a pinch of sugar.
Add 2g of instant yeast to the milk. Stir and let it sit for 5 minutes.
Add flour, sugar, egg, and milk with instant yeast in a separate bowl, and stir until a dough forms. If the dough is too dry, gradually add milk until the dough is a little sticky to the touch.
Cover the bowl, and wait for 20 minutes.
After 20 minutes, add in butter. Knead for about 5 minutes or until you can stretch the dough, where it almost becomes transparent.
Place the dough back in the bowl and cover it. Let it sit for 1 hour or until the dough doubles in size.
Brown Dough (Grizzly Bear):
Take 50g of lukewarm milk and add a pinch of sugar.
Add 1g of instant yeast to the milk. Stir and let it sit for 5 minutes (save a little for the black sesame dough).
Add flour, cocoa powder, sugar, egg, and milk with instant yeast in a separate bowl, and stir until a dough forms. If the dough is too dry, gradually add milk until the dough is a little sticky to the touch.
Cover the bowl, and wait for 20 minutes.
After 20 minutes, add in butter. Knead for about 5 minutes or until you can stretch the dough, where it almost becomes transparent.
Place the dough back in the bowl and cover it. Let it sit for 1 hour or until the dough doubles in size.
Black Sesame Dough:
In a bowl, add flour, black sesame powder, and leftover milk with instant yeast (the amount saved from the brown dough) and mix until a dough forms. If the dough is too dry, gradually add milk until the dough is soft.
Cover the bowl, and wait for 20 minutes.
After 20 minutes, knead for about a minute.
After an hour:
For the white dough, divide them into 11 portions. Each portion will be 32g. The remaining dough will be the ears.
For the brown dough, divide them into 5 portions. Each portion will be 32g. The remaining dough will be the ears.
Knead the portions into a circle and proof for 15 minutes.
15 minutes later, knead again into a circle and place them in your square pan (however you like).
With the leftover dough, make little small balls for the ears.
Preheat the oven to 300F.
Time to Decorate:
Add the ears to each bun. To prevent the ears from falling off, you can add a little bit of water to the head before sticking on the ears. The water acts like our glue.
For Panda’s black stripe, take 2g of the black sesame dough and roll it vertically.
To stick on the black stripe for Panda’s body, add a little bit of water to the area and gently flatten the stripe when attaching to the body.
For Panda’s eyes, make little tiny circles.
For Panda’s ears, make small circles.
Once everything is attached, take aluminium foil and cover the square pan before baking. This will prevent the buns from turning colours.
Bake the buns at 300F for about 25 minutes. I am using a countertop oven and this oven is hands down the best one I have ever used.
Once the time is up, leave the buns in the oven for 5 minutes before taking them out. This will help prevent them from deflating or getting wrinkly.
Let the bread cool off.
Take melted chocolate and draw in the eyes and an oval for the nose.
Your We Bare Bears pull-apart bread is ready! My favourite way to enjoy these is by adding condensed milk.
